Elephant's and O's.


These little goodies are called Butter Cookies. They are fabulous. If you are familiar with the Danish Butter Cookies that Costco sells (they come in blue tins) ... Well, these are them. And here's the recipe for you!

3 cubes of butter
1 cup sugar
1 egg
3 1/2 cup flour
1 teaspoon vanilla

Mix it all together. Preheat the oven to 375° and bake for 8-10 minutes. Remove from cookie sheet immediately, and I prefer them cooled. But feel free to dig in whenever you'd like.




This fabulous elephant-shaped cookie cutter came from my great-grandma. What a treasure! I used the Better Homes and Garden's Gingerbread Cutout recipe for these. You can find the recipe here:
I used cream cheese frosting... a definite plus. Also, if you like them soft, they mature well (just like sugar cookies) so just give them a day or two!
